While you may have heard of the green eye’d monster of jealousy, this soup is delightfully more enjoyable than that.
It starts with a pre-soak of two cups of yellow eye’d beans.
Next you cook the pre-soaked and rinsed beans in 6 cups of new water in the pressure cooker for 5 – 7 minutes (much longer and they turn to mush). Add a tablespoons of our Chowdha Powah spice blend into the pressure cooker.
Then saute in a large stock pot in olive oil – a cup of diced pumpkin, one medium onions chopped, 2 sliced leeks, 3 large cloves fine chopped garlic, 8 ounces of diced kielbasa, and a cup of cut parsley, another tablespoon of chowdha powha spice blend, and a little extra kick with a tablespoon of smoked paprika and a teaspoon of hot pepper flakes.
When the veggies are soft, add in the cooked beans (and their cooking liquid) into the cooked veggies. Let simmer on very low for a half hour.
Salt to taste and serve.
This is a bit spicy so if you want less heat, dial back the smoked paprika and hot pepper flakes.
